A rich, creamy Tuscan-style soup made with Italian sausage, tender potatoes, kale, and a garlic-infused broth — perfect for cozy dinners or meal prep.

Ingredients

  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 34 garlic cloves, minced

  • 4 cups potatoes, diced or sliced

  • 56 cups chicken broth

  • 3 cups chopped kale

  • 1 cup heavy cream

  • Salt and pepper to taste

  • Optional: ¼ tsp red pepper flakes

  • Optional: ¼ cup grated Parmesan

Instructions

  • Brown sausage in oil in a large pot. Set aside.

  • Sauté onion and garlic until soft.

  • Add potatoes, broth, salt, pepper, and red pepper flakes. Simmer 12–15 minutes.

  • Stir in kale. Simmer 5 minutes.

  • Add cream and return sausage. Simmer gently 2–3 minutes.

  • Adjust seasoning. Serve hot with optional Parmesan.

Notes

  • Substitute kale with spinach or chard.

  • Use coconut milk for a dairy-free version.

  • Freezes best without cream and kale added.
