A rich, creamy Tuscan-style soup made with Italian sausage, tender potatoes, kale, and a garlic-infused broth — perfect for cozy dinners or meal prep.
1 lb Italian sausage (mild or spicy)
1 tbsp olive oil
1 medium onion, diced
3–4 garlic cloves, minced
4 cups potatoes, diced or sliced
5–6 cups chicken broth
3 cups chopped kale
1 cup heavy cream
Salt and pepper to taste
Optional: ¼ tsp red pepper flakes
Optional: ¼ cup grated Parmesan
Brown sausage in oil in a large pot. Set aside.
Sauté onion and garlic until soft.
Add potatoes, broth, salt, pepper, and red pepper flakes. Simmer 12–15 minutes.
Stir in kale. Simmer 5 minutes.
Add cream and return sausage. Simmer gently 2–3 minutes.
Adjust seasoning. Serve hot with optional Parmesan.
Substitute kale with spinach or chard.
Use coconut milk for a dairy-free version.
Freezes best without cream and kale added.
