A hearty baked dinner with smoky sausage, crispy potatoes, caramelized onions, and melted cheese — all in one comforting, easy-to-make dish.

  • 1214 oz smoked sausage, sliced

  • lbs Yukon Gold or red potatoes, diced

  • 1 onion, sliced

  • 1 bell pepper, sliced (optional)

  • 23 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • 1 tsp dried thyme or rosemary

  • Salt & pepper to taste

  • 1 cup shredded cheese (optional)

  • Fresh parsley or chives for garnish

Instructions

  • Preheat oven to 400°F and grease a large baking dish.

  • Toss potatoes, sausage, onion, and pepper with oil and seasonings.

  • Spread in an even layer and bake 40–45 minutes, stirring once.

  • Add cheese during last 5–7 minutes, if using.

  • Rest 5 minutes, garnish, and serve.
