12–14 oz smoked sausage, sliced
1½ lbs Yukon Gold or red potatoes, diced
1 onion, sliced
1 bell pepper, sliced (optional)
2–3 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
1 tsp dried thyme or rosemary
Salt & pepper to taste
1 cup shredded cheese (optional)
Fresh parsley or chives for garnish
Preheat oven to 400°F and grease a large baking dish.
Toss potatoes, sausage, onion, and pepper with oil and seasonings.
Spread in an even layer and bake 40–45 minutes, stirring once.
Add cheese during last 5–7 minutes, if using.
Rest 5 minutes, garnish, and serve.
