Smashburger Quesadillas blend the crispy, caramelized flavor of a smash-style burger with the cheesy crunch of a quesadilla — a fast, flavorful fusion perfect for any night.
1 lb ground beef (80/20)
4 flour tortillas (8-inch)
1 ½ cups shredded cheddar cheese
½ cup chopped onions (optional)
¼ cup sliced dill pickles
Salt & pepper, to taste
Burger sauce or dipping sauce of choice
Oil or mayo, for crisping
Preheat a skillet over medium-high heat.
Divide ground beef into 2–3 oz balls. Do not season yet.
Add oil to skillet. Place beef balls and smash flat. Season with salt and pepper.
Cook 2–3 minutes per side until browned. Add onions after flipping, if using.
Remove patties. Wipe skillet and reduce heat to medium-low.
Place tortilla in skillet. Layer cheese, patties, pickles, and more cheese. Top with second tortilla.
Cook 2–3 minutes per side until golden and crisp.
Rest for 1 minute, slice, and serve with dipping sauce.
Use mayo for extra crispy tortillas.
Add jalapeños or bacon for variations.
