Smashburger Quesadillas blend the crispy, caramelized flavor of a smash-style burger with the cheesy crunch of a quesadilla — a fast, flavorful fusion perfect for any night.

Ingredients

  • 1 lb ground beef (80/20)

  • 4 flour tortillas (8-inch)

  • 1 ½ cups shredded cheddar cheese

  • ½ cup chopped onions (optional)

  • ¼ cup sliced dill pickles

  • Salt & pepper, to taste

  • Burger sauce or dipping sauce of choice

  • Oil or mayo, for crisping

Instructions

  • Preheat a skillet over medium-high heat.

  • Divide ground beef into 2–3 oz balls. Do not season yet.

  • Add oil to skillet. Place beef balls and smash flat. Season with salt and pepper.

  • Cook 2–3 minutes per side until browned. Add onions after flipping, if using.

  • Remove patties. Wipe skillet and reduce heat to medium-low.

  • Place tortilla in skillet. Layer cheese, patties, pickles, and more cheese. Top with second tortilla.

  • Cook 2–3 minutes per side until golden and crisp.

  • Rest for 1 minute, slice, and serve with dipping sauce.

Notes

  • Use mayo for extra crispy tortillas.

  • Add jalapeños or bacon for variations.

  • Great for freezing and reheating.
