This one-pot creamy Cajun sausage pasta is a quick, comforting meal loaded with smoky sausage, Cajun spices, and tender pasta in a rich, velvety sauce.

Ingredients

  • 1 tbsp olive oil

  • 12 oz Andouille or kielbasa sausage, sliced

  • 1 small yellow onion, diced

  • 3 garlic cloves, minced

  • 2 tsp Cajun seasoning

  • 1 can (14.5 oz) diced tomatoes

  • 8 oz short pasta (penne or rotini)

  • 2 cups chicken broth

  • ¾ cup heavy cream

  • ½ cup grated Parmesan cheese

  • Salt and black pepper to taste

  • Optional: chopped parsley or green onions for garnish

Instructions

  • In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 4–5 minutes.

  • Add diced onion and sauté until soft, then stir in garlic and cook 30 seconds more.

  • Sprinkle Cajun seasoning, add diced tomatoes (with juices), and stir to combine.

  • Add pasta and chicken broth. Stir well, bring to a boil, then reduce heat and simmer covered for 10–12 minutes, stirring occasionally.

  • Once pasta is tender, stir in heavy cream and Parmesan. Simmer 2–3 minutes until thickened.

  • Taste and adjust seasoning. Garnish and serve hot.

Notes

For dairy-free, use coconut milk and omit cheese. Add bell peppers or spinach for extra vegetables. Store leftovers up to 3 days in the fridge.
