This one-pot creamy Cajun sausage pasta is a quick, comforting meal loaded with smoky sausage, Cajun spices, and tender pasta in a rich, velvety sauce.
1 tbsp olive oil
12 oz Andouille or kielbasa sausage, sliced
1 small yellow onion, diced
3 garlic cloves, minced
2 tsp Cajun seasoning
1 can (14.5 oz) diced tomatoes
8 oz short pasta (penne or rotini)
2 cups chicken broth
¾ cup heavy cream
½ cup grated Parmesan cheese
Salt and black pepper to taste
Optional: chopped parsley or green onions for garnish
In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, about 4–5 minutes.
Add diced onion and sauté until soft, then stir in garlic and cook 30 seconds more.
Sprinkle Cajun seasoning, add diced tomatoes (with juices), and stir to combine.
Add pasta and chicken broth. Stir well, bring to a boil, then reduce heat and simmer covered for 10–12 minutes, stirring occasionally.
Once pasta is tender, stir in heavy cream and Parmesan. Simmer 2–3 minutes until thickened.
Taste and adjust seasoning. Garnish and serve hot.
For dairy-free, use coconut milk and omit cheese. Add bell peppers or spinach for extra vegetables. Store leftovers up to 3 days in the fridge.
