Muffin Breakfast Pizzas are crispy, cheesy, and protein-packed mini breakfasts made on toasted English muffins with scrambled eggs, sausage or bacon, and melty cheese — ready in 30 minutes.
3 English muffins, split
5 eggs
¼ cup milk
½ cup cooked crumbled sausage or bacon
1 cup shredded cheddar cheese
1 tbsp butter (optional)
Salt & pepper to taste
Optional: salsa, cream cheese, sautéed vegetables
Preheat oven to 400°F. Lightly toast English muffin halves for 5 minutes.
Whisk eggs with milk, salt, and pepper. Scramble until just set.
Spread each muffin with butter or salsa if using.
Layer eggs, meat, and cheese on top of each muffin half.
Bake for 8–10 minutes until cheese is melted and golden.
Broil 1–2 minutes for extra crisp. Serve warm.
Great for meal prep and freezing.
Add veggies or use alternate meats as desired.
For baked egg version, crack eggs directly onto muffins and bake longer.
