Muffin Breakfast Pizzas are crispy, cheesy, and protein-packed mini breakfasts made on toasted English muffins with scrambled eggs, sausage or bacon, and melty cheese — ready in 30 minutes.

Ingredients

  • 3 English muffins, split

  • 5 eggs

  • ¼ cup milk

  • ½ cup cooked crumbled sausage or bacon

  • 1 cup shredded cheddar cheese

  • 1 tbsp butter (optional)

  • Salt & pepper to taste

  • Optional: salsa, cream cheese, sautéed vegetables

Instructions

  • Preheat oven to 400°F. Lightly toast English muffin halves for 5 minutes.

  • Whisk eggs with milk, salt, and pepper. Scramble until just set.

  • Spread each muffin with butter or salsa if using.

  • Layer eggs, meat, and cheese on top of each muffin half.

  • Bake for 8–10 minutes until cheese is melted and golden.

  • Broil 1–2 minutes for extra crisp. Serve warm.

Notes

  • Great for meal prep and freezing.

  • Add veggies or use alternate meats as desired.

  • For baked egg version, crack eggs directly onto muffins and bake longer.
