A cheesy, garlicky spin on classic meatloaf made with ground beef and pork, Parmesan, and fresh herbs, finished with a golden garlic-Parmesan crust.

Ingredients

  • 1 lb ground beef (80/20)

  • ½ lb ground pork

  • 2 eggs

  • ½ cup milk

  • ¾ cup plain or Italian breadcrumbs

  • ½ cup freshly grated Parmesan cheese

  • 46 cloves garlic, minced

  • ½ small onion, grated or finely chopped

  • 2 tbsp chopped fresh parsley

  • 1 tsp Italian seasoning

  • 1 tsp salt

  • ½ tsp black pepper

Topping:

  • ¼ cup breadcrumbs

  • ¼ cup shredded Parmesan

  • 1 tbsp olive oil or melted butter

Instructions

  • Preheat oven to 375°F. Line a baking sheet or use a loaf pan.

  • In a large bowl, mix eggs, milk, breadcrumbs, Parmesan, garlic, onion, parsley, seasoning, salt, and pepper. Let sit 5 minutes.

  • Add beef and pork. Mix gently to combine.

  • Shape into a loaf and bake for 35 minutes.

  • Mix topping and sprinkle over meatloaf. Return to oven for 15–20 minutes, until golden and cooked through (160°F internal temp).

  • Rest 10 minutes before slicing.

Notes

  • For gluten-free, use GF breadcrumbs.

  • Add veggies like zucchini for extra moisture.

  • Leftovers make amazing sandwiches!
