A cheesy, garlicky spin on classic meatloaf made with ground beef and pork, Parmesan, and fresh herbs, finished with a golden garlic-Parmesan crust.
1 lb ground beef (80/20)
½ lb ground pork
2 eggs
½ cup milk
¾ cup plain or Italian breadcrumbs
½ cup freshly grated Parmesan cheese
4–6 cloves garlic, minced
½ small onion, grated or finely chopped
2 tbsp chopped fresh parsley
1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
Topping:
¼ cup breadcrumbs
¼ cup shredded Parmesan
1 tbsp olive oil or melted butter
Preheat oven to 375°F. Line a baking sheet or use a loaf pan.
In a large bowl, mix eggs, milk, breadcrumbs, Parmesan, garlic, onion, parsley, seasoning, salt, and pepper. Let sit 5 minutes.
Add beef and pork. Mix gently to combine.
Shape into a loaf and bake for 35 minutes.
Mix topping and sprinkle over meatloaf. Return to oven for 15–20 minutes, until golden and cooked through (160°F internal temp).
Rest 10 minutes before slicing.
For gluten-free, use GF breadcrumbs.
Add veggies like zucchini for extra moisture.
