  • 1/2 cup enchilada or taco sauce

  • 1.5 cups shredded Mexican blend cheese

  • 1/4 cup diced tomatoes

  • 1/4 cup sliced black olives

  • 1/4 cup chopped red onions

  • 2 tbsp chopped fresh cilantro

  • Sour cream and jalapeños (optional for garnish)

  • Oil for frying or baking tortillas

Instructions

  • Fry tortillas in oil until golden and crisp, or bake at 400°F for 5–7 minutes per side.

  • On a baking sheet, layer tortilla → refried beans → beef → second tortilla.

  • Spread sauce on top tortilla. Sprinkle cheese and toppings.

  • Bake at 400°F for 6–8 mins, until cheese melts.

  • Garnish with cilantro, sour cream, or jalapeños. Slice and serve.

Notes

  • Use baked tostada shells for shortcut version.

  • Customize toppings to taste.

  • Make vegetarian with black beans instead of beef.
