A creamy, cozy vegetable soup that’s low in calories, full of flavor, and completely customizable. Perfect for clean eating, dairy-free diets, or simple meal prep.

Ingredients

  • 1 tbsp olive oil

  • 1 onion, diced

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 34 garlic cloves, minced

  • 2 cups cauliflower florets (or 2 diced potatoes)

  • 4 cups low-sodium vegetable broth

  • 1 bay leaf

  • 1/2 tsp dried thyme

  • Salt and pepper, to taste

  • 1/2 to 3/4 cup unsweetened almond milk (or skim milk)

Optional Add-Ins:

  • 1 zucchini, chopped

  • 1/4 cup pureed white beans

  • Red pepper flakes or turmeric

Notes

Store in the fridge for up to 5 days or freeze up to 3 months. Add beans or quinoa for a heartier soup.
