1 onion, diced
2 carrots, chopped
2 celery stalks, chopped
3–4 garlic cloves, minced
2 cups cauliflower florets (or 2 diced potatoes)
4 cups low-sodium vegetable broth
1 bay leaf
1/2 tsp dried thyme
Salt and pepper, to taste
1/2 to 3/4 cup unsweetened almond milk (or skim milk)
Optional Add-Ins:
1 zucchini, chopped
1/4 cup pureed white beans
Red pepper flakes or turmeric
