Baked Italian sausage with peppers, onions, and tomato sauce prepared as a hearty casserole.
1 ½ lb Italian sausage
2 tbsp olive oil
1 large onion, sliced
3 bell peppers, sliced
3 cloves garlic, minced
1 can crushed tomatoes (28 oz)
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
Salt and black pepper to taste
1 cup shredded mozzarella or provolone (optional)
Brown sausage in olive oil; slice and set aside.
Cook onions and peppers; add garlic.
Stir in tomatoes, paste, and seasoning.
Add sausage and transfer to baking dish.
Top with cheese if using.
Bake covered, then uncovered until bubbling.
Serve with pasta, bread, or vegetables depending on preference.
