Baked Italian sausage with peppers, onions, and tomato sauce prepared as a hearty casserole.

Ingredients

  • 1 ½ lb Italian sausage

  • 2 tbsp olive oil

  • 1 large onion, sliced

  • 3 bell peppers, sliced

  • 3 cloves garlic, minced

  • 1 can crushed tomatoes (28 oz)

  • 2 tbsp tomato paste

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • Salt and black pepper to taste

  • 1 cup shredded mozzarella or provolone (optional)

Instructions

  • Brown sausage in olive oil; slice and set aside.

  • Cook onions and peppers; add garlic.

  • Stir in tomatoes, paste, and seasoning.

  • Add sausage and transfer to baking dish.

  • Top with cheese if using.

  • Bake covered, then uncovered until bubbling.

Serve with pasta, bread, or vegetables depending on preference.
