A hearty baked casserole with Italian sausage, sweet bell peppers, marinara sauce, and melted cheese — a cozy and flavorful family meal.

Ingredients

  • 1 lb Italian sausage (mild or hot), casings removed

  • 1 large yellow onion, sliced

  • 3 bell peppers (red, yellow, green), sliced

  • 2 cloves garlic, minced

  • 2 cups marinara sauce

  • 1½ cups shredded mozzarella cheese

  • ¼ cup grated parmesan cheese

  • 1 tsp dried oregano

  • ½ tsp dried basil

  • Olive oil, salt, black pepper, red pepper flakes to taste

  • Optional: ¾ cup ricotta cheese

Instructions

  • Preheat oven to 375°F. Grease a 9×13 baking dish.

  • Brown sausage in skillet over medium heat. Remove and set aside.

  • Sauté onions and peppers until soft. Add garlic and cook 1 minute. Season with herbs and spices.

  • Layer half of veggies, then sausage, marinara, remaining veggies, and cheeses. Add ricotta if using.

  • Cover with foil and bake 20 minutes. Uncover and bake 10–15 minutes until bubbly.

  • Let cool 5 minutes. Garnish with parsley and serve.

Notes

Serve with pasta, bread, or over rice. Refrigerate leftovers up to 4 days or freeze up to 2 months.
