A hearty baked casserole with Italian sausage, sweet bell peppers, marinara sauce, and melted cheese — a cozy and flavorful family meal.
1 lb Italian sausage (mild or hot), casings removed
1 large yellow onion, sliced
3 bell peppers (red, yellow, green), sliced
2 cloves garlic, minced
2 cups marinara sauce
1½ cups shredded mozzarella cheese
¼ cup grated parmesan cheese
1 tsp dried oregano
½ tsp dried basil
Olive oil, salt, black pepper, red pepper flakes to taste
Optional: ¾ cup ricotta cheese
Preheat oven to 375°F. Grease a 9×13 baking dish.
Brown sausage in skillet over medium heat. Remove and set aside.
Sauté onions and peppers until soft. Add garlic and cook 1 minute. Season with herbs and spices.
Layer half of veggies, then sausage, marinara, remaining veggies, and cheeses. Add ricotta if using.
Cover with foil and bake 20 minutes. Uncover and bake 10–15 minutes until bubbly.
Let cool 5 minutes. Garnish with parsley and serve.
Serve with pasta, bread, or over rice. Refrigerate leftovers up to 4 days or freeze up to 2 months.
