1 lb ground chicken
1 egg
½ cup breadcrumbs or almond flour
½ cup crumbled feta cheese
2 cloves garlic, minced
2 tbsp parsley, chopped
1 tbsp fresh dill or 1 tsp dried
1 tsp dried oregano
Zest of 1 lemon
½ tsp salt
¼ tsp black pepper
Preheat oven to 400°F or heat oil in skillet.
Mix all ingredients in a large bowl until just combined.
Form into 1½-inch meatballs (about 18–20).
Bake for 18–20 minutes or pan-fry for 8–10 minutes until golden and cooked through.
Serve warm with tzatziki, salad, or grains.
