Ingredients

Scale
  • 23 large yellow onions, thinly sliced

  • 1 tbsp butter

  • 24 oz frozen or homemade meatballs

  • 2 cups beef broth

  • 1 tbsp Worcestershire sauce

  • 23 garlic cloves, minced

  • ½ tsp dried thyme (or 2 sprigs fresh)

  • 1 cup shredded Gruyère or Swiss cheese

  • Salt & pepper, to taste

  • Optional: 1 tbsp cornstarch + 2 tbsp water (for thickening)

Instructions

  • Place sliced onions and butter in the bottom of a slow cooker.

  • Add meatballs on top of onions.

  • Pour in beef broth, Worcestershire sauce, garlic, and thyme.

  • Cover and cook on Low for 6–8 hours or High for 3–4 hours.

  • Optional: To thicken, mix cornstarch and water, stir in, and cook 15 minutes more on High.

  • Add shredded cheese during the final 10–15 minutes, cover to melt.

  • Serve hot over mashed potatoes, noodles, or in hoagie rolls.

Notes

Use turkey or plant-based meatballs as needed. For more caramelized flavor, sauté onions first. For broiled cheese, transfer meatballs to a baking dish, add cheese, and broil.
