This creamy Tuscan salmon is pan-seared and simmered in a garlic Parmesan sauce with sun-dried tomatoes and spinach. Rich, flavorful, and perfect for a romantic dinner.
4 salmon fillets (about 6 oz each)
1 tbsp olive oil
1 tbsp butter
3 garlic cloves, minced
½ cup sun-dried tomatoes, sliced
1 cup heavy cream
½ tsp Italian seasoning
2 cups baby spinach
½ cup freshly grated Parmesan cheese
Salt and pepper, to taste
Pinch of red pepper flakes (optional)
Lemon juice, for finishing (optional)
Season salmon with salt and pepper.
Sear salmon in butter and oil for 4–5 minutes per side. Remove.
Sauté garlic and sun-dried tomatoes in the same pan.
Add cream and Italian seasoning. Simmer 2–3 minutes.
Stir in spinach until wilted. Add Parmesan and stir to melt.
Return salmon to skillet and spoon sauce over top.
Finish with lemon juice and serve warm.
Use half-and-half for a lighter version. Serve with pasta, risotto, or greens. Best enjoyed fresh.
