Creamy Garlic Parmesan Chicken Pasta is a one-pot dinner featuring tender chicken and pasta simmered in a rich garlic cream sauce, ready in about 30 minutes.
1 1/2 pounds boneless skinless chicken breast, cubed
8 ounces penne or rotini pasta
2 tablespoons butter
1 tablespoon olive oil
4 cloves garlic, minced
2 cups chicken broth
1 1/2 cups heavy cream
1 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
Salt and black pepper to taste
2 tablespoons chopped fresh parsley optional
Season chicken with salt and pepper.
Heat olive oil and 1 tablespoon butter in large pot over medium heat.
Cook chicken until golden and cooked through. Remove and set aside.
Add remaining butter and sauté garlic briefly.
Pour in broth and cream, stirring to combine.
Add pasta and Italian seasoning. Bring to gentle boil, then simmer 10 to 12 minutes, stirring occasionally.
Return chicken to pot and stir in Parmesan until melted.
Adjust seasoning and garnish with parsley before serving.
Keep heat moderate to prevent cream from separating. Add a splash of broth if sauce thickens too much. Best served immediately.
