A comforting, cheesy baked casserole with tender chicken, fresh spinach, and a creamy garlic-Parmesan sauce — perfect for family dinners or make-ahead meals.
3 cups cooked chicken, chopped
4 cups fresh spinach (or 1 cup frozen, drained)
3 tbsp butter
3 garlic cloves, minced
3 tbsp all-purpose flour
1½ cups chicken broth
1 cup heavy cream
4 oz cream cheese
½ cup grated Parmesan
1½ cups shredded mozzarella, divided
½ tsp salt
¼ tsp black pepper
¼ tsp garlic powder
Pinch of paprika or nutmeg (optional)
Preheat oven to 375°F. Grease a 9×13” baking dish.
In a skillet, melt butter. Sauté garlic, then stir in flour. Cook 1 min.
Whisk in broth, then cream. Add cream cheese and whisk until smooth.
Season, then stir in spinach to wilt. Add chicken and cheeses.
Spread in baking dish. Top with remaining cheese.
Bake 20–25 mins until bubbly. Broil 2 mins for golden top if desired.
Rest 5–10 mins before serving.
Add cooked pasta or rice for a full meal.
Freeze after baking or before for easy meals later.
Great with roasted veggies or salad on the side.
