A comforting, cheesy baked casserole with tender chicken, fresh spinach, and a creamy garlic-Parmesan sauce — perfect for family dinners or make-ahead meals.

Ingredients

  • 3 cups cooked chicken, chopped

  • 4 cups fresh spinach (or 1 cup frozen, drained)

  • 3 tbsp butter

  • 3 garlic cloves, minced

  • 3 tbsp all-purpose flour

  • 1½ cups chicken broth

  • 1 cup heavy cream

  • 4 oz cream cheese

  • ½ cup grated Parmesan

  • 1½ cups shredded mozzarella, divided

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp garlic powder

  • Pinch of paprika or nutmeg (optional)

Instructions

  • Preheat oven to 375°F. Grease a 9×13” baking dish.

  • In a skillet, melt butter. Sauté garlic, then stir in flour. Cook 1 min.

  • Whisk in broth, then cream. Add cream cheese and whisk until smooth.

  • Season, then stir in spinach to wilt. Add chicken and cheeses.

  • Spread in baking dish. Top with remaining cheese.

  • Bake 20–25 mins until bubbly. Broil 2 mins for golden top if desired.

  • Rest 5–10 mins before serving.

Notes

  • Add cooked pasta or rice for a full meal.

  • Freeze after baking or before for easy meals later.

  • Great with roasted veggies or salad on the side.
