1 tbsp olive oil
1 small onion, diced
2 tbsp fresh ginger, minced
4 garlic cloves, minced
8 cups low-sodium chicken broth
2 boneless skinless chicken breasts or thighs
2 carrots, sliced
2 celery stalks, sliced
4–6 oz egg noodles
Salt and pepper to taste
Optional: 1 tbsp soy sauce, lemon juice, or rice vinegar
Optional garnish: parsley, green onions, cilantro
Sauté onion, ginger, and garlic in olive oil until fragrant.
Add broth, chicken, carrots, celery, and seasonings. Simmer 20–25 minutes.
Remove chicken, shred, and return to pot.
Add noodles and simmer 6–8 minutes until tender.
Stir in lemon juice or vinegar. Garnish and serve hot.
Use pre-cooked chicken to save time.
