2 lbs Russet or Yukon Gold potatoes, diced
12–14 oz smoked sausage, sliced
1 packet ranch seasoning mix
2 tbsp olive oil or melted butter
1½–2 cups shredded cheddar cheese
Optional: green onions, sour cream, bell peppers, jalapeños
Preheat oven to 400°F. Grease a large baking dish or sheet pan.
Toss potatoes with oil and ranch seasoning. Roast 25–30 minutes.
Add sliced sausage, stir, and return to oven for 15–20 minutes.
Sprinkle with cheese and bake 5–7 minutes until melted.
Garnish with green onions and serve hot.
Use turkey sausage for a leaner version.
