  • 2 lbs Russet or Yukon Gold potatoes, diced

  • 1214 oz smoked sausage, sliced

  • 1 packet ranch seasoning mix

  • 2 tbsp olive oil or melted butter

  • 2 cups shredded cheddar cheese

  • Optional: green onions, sour cream, bell peppers, jalapeños

Instructions

  • Preheat oven to 400°F. Grease a large baking dish or sheet pan.

  • Toss potatoes with oil and ranch seasoning. Roast 25–30 minutes.

  • Add sliced sausage, stir, and return to oven for 15–20 minutes.

  • Sprinkle with cheese and bake 5–7 minutes until melted.

  • Garnish with green onions and serve hot.
