A cozy, cheesy one-pan meal featuring roasted potatoes, smoky sausage, ranch seasoning, and melted cheddar. Perfect for family dinners or meal prep.
2 lbs gold or red potatoes, diced
12–16 oz smoked sausage, sliced
2–3 tbsp olive oil
1 packet ranch seasoning mix
1½ cups shredded cheddar cheese
Optional: green onions, bacon bits, bell peppers
Preheat oven to 400°F (200°C). Line or grease a 9×13 pan or large sheet pan.
Toss diced potatoes with oil and ranch seasoning. Mix in sausage.
Spread in a single layer and bake 30–35 minutes, stirring halfway.
Sprinkle cheese on top. Bake 5–7 more minutes until melted.
Garnish and serve hot.
Add veggies for variation. Store leftovers in fridge for up to 4 days. Reheat in oven or microwave.
