4 slices thick sandwich bread or sourdough
1½ cups cooked chicken (shredded or sliced)
1 cup shredded cheddar or Monterey Jack
2 slices mozzarella or provolone
4 tbsp softened butter
2 garlic cloves, minced (or ½ tsp garlic powder)
1 tbsp chopped parsley or Italian seasoning
Salt and pepper to taste
Optional: tomatoes, onions, Parmesan, sour cream
Mix softened butter, garlic, parsley, and Parmesan (if using).
Season and warm the chicken slightly.
Assemble sandwiches: garlic butter on outsides, cheese and chicken inside.
Cook in skillet 3–4 mins per side, or bake at 375°F for 10 mins, flipping once.
Let rest 1–2 minutes. Slice and serve hot.
Add tomatoes or onions for extra flavor.
Use pre-cooked chicken for faster prep.
