1 cup shredded mozzarella
½ cup shredded cheddar
¼ cup Parmesan (optional)
4 large eggs
4 strips bacon or ½ cup cooked sausage
¼ cup diced bell pepper
¼ cup diced onion
Salt and pepper to taste
Chopped green onions or parsley for garnish
Optional: red pepper flakes, hot sauce
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
