6–8 boneless skinless chicken thighs
⅓ cup soy sauce
¼ cup brown sugar
¼ cup water
2 tbsp rice vinegar or white vinegar
4 cloves garlic, minced
1 tsp grated ginger (optional)
1 tbsp neutral oil (for searing)
Scallions and sesame seeds for garnish (optional)
Season chicken lightly with pepper.
In a bowl, whisk soy sauce, sugar, vinegar, water, garlic, and ginger.
Sear chicken in oil for 4–5 mins per side until browned. Remove.
Pour sauce into pan. Add chicken. Simmer uncovered 15–20 mins, flipping once.
Let sauce thicken and caramelise. Remove from heat.
Garnish and serve over rice or noodles.
