Beef Tips and Gravy Stovetop Recipe for a Cozy Dinner

Tender stovetop beef tips simmered in a rich homemade gravy. Comforting, hearty, and ready in under an hour for a restaurant-style dinner.

Ingredients

1.52 lbs beef tips (sirloin, stew meat, or chuck), cubed
2 tbsp flour (divided)
Salt and black pepper
1 tbsp olive oil
1 tbsp butter
1 onion, diced
2 garlic cloves, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp soy sauce (optional)
½ tsp dried thyme (or 1 fresh sprig)
2 tbsp water (for slurry)

Instructions

  • Pat beef dry and toss with 2 tbsp flour, salt, and pepper.

  • Sear beef in oil and butter in batches until browned. Remove and set aside.

  • Sauté onion 4–5 min, add garlic for 30 sec.

  • Add broth, Worcestershire, soy sauce, and thyme. Scrape browned bits.

  • Return beef to pan. Simmer covered on low 35–45 minutes.

  • Mix 1 tbsp flour with 2 tbsp water. Stir in to thicken gravy. Simmer uncovered 5–10 minutes.

  • Adjust seasoning. Serve over mashed potatoes or rice.

Notes

Add mushrooms or red wine for variation. Make ahead or freeze leftovers. Gluten-free option: use cornstarch.
