Tender stovetop beef tips simmered in a rich homemade gravy. Comforting, hearty, and ready in under an hour for a restaurant-style dinner.
1.5–2 lbs beef tips (sirloin, stew meat, or chuck), cubed
2 tbsp flour (divided)
Salt and black pepper
1 tbsp olive oil
1 tbsp butter
1 onion, diced
2 garlic cloves, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp soy sauce (optional)
½ tsp dried thyme (or 1 fresh sprig)
2 tbsp water (for slurry)
Pat beef dry and toss with 2 tbsp flour, salt, and pepper.
Sear beef in oil and butter in batches until browned. Remove and set aside.
Sauté onion 4–5 min, add garlic for 30 sec.
Add broth, Worcestershire, soy sauce, and thyme. Scrape browned bits.
Return beef to pan. Simmer covered on low 35–45 minutes.
Mix 1 tbsp flour with 2 tbsp water. Stir in to thicken gravy. Simmer uncovered 5–10 minutes.
Adjust seasoning. Serve over mashed potatoes or rice.
Add mushrooms or red wine for variation. Make ahead or freeze leftovers. Gluten-free option: use cornstarch.
