These grilled Bang Bang Chicken Skewers are juicy, flavorful, and coated in a creamy sweet-and-spicy sauce — perfect for weeknight dinners, meal prep, or outdoor entertaining.

For the Chicken:

  • 1.52 lbs boneless chicken breast or thighs, cubed

  • 2 tbsp olive oil

  • 1 tbsp soy sauce

  • 1 tbsp honey or brown sugar

  • 1 tbsp lime juice or rice vinegar

  • 1 tbsp sriracha

  • 2 garlic cloves, minced

For the Sauce:

  • ½ cup mayonnaise

  • ¼ cup sweet chili sauce

  • 1 tbsp sriracha

  • 1 tsp honey (optional)

  • 1 tsp lime juice

Garnishes:

  • Scallions, sesame seeds, cilantro, lime wedges

Instructions

  • Combine marinade ingredients and toss chicken cubes. Chill for 30–60 minutes.

  • Whisk all sauce ingredients together and refrigerate until serving.

  • Thread chicken onto soaked skewers.

  • Grill 4–5 minutes per side (or bake at 425°F for 15–20 min), until cooked through.

  • Drizzle with sauce and garnish with scallions, sesame seeds, and lime.

Notes

Use yogurt instead of mayo for a lighter sauce. Try adding veggies to the skewers or serve as bowls with rice and slaw.
